Italian Steak with Rosemary and Crispy Garlic

Sam DiBattista of Vivo Kitchen shares his Italian steak recipe, flavored with rosemary and two kinds of garlic for added texture and flavor.

This recipe is inspired by rustic Italian dishes where beef is thinly sliced and seared rapidly at high heat. Rosemary and garlic are sautéed gently in the same pan as the meat so that they can soak up the juices from the steak while they contribute their flavors to this pan sauce.

The steak, the sauce and the crispy garlic join forces on the plate to make the centerpiece of a gorgeous meal! Think about serving it with Sam’s delicious side dishes: Farro and White Bean Salad, and Roasted Beets with Feta Crumble.

Crispy garlic

You can never go wrong with crispy garlic. This condiment can be used in a variety of recipes to bring a sweet and crispy addition to meats, soups and salads.

Ingredients

6 cloves minced fresh garlic

1 cup of canola oil (or other high heat oil)

Instructions

Add oil to a pot and bring to temp (350-375 degrees), add your garlic and let fry until a light golden brown (about 3-4 minutes). Remove from oil and place on a baking sheet lined with a paper towel. Garlic will continue cooking after it’s removed from the oil, so be sure not to over cook.


 

Bistecca alla Rosmarí

Ingredients

1 medium strip or ribeye steak

salt and pepper

2 cloves garlic thinly sliced

small bunch fresh rosemary

1 tbs of crispy garlic

Instructions

In medium hot pan, add plenty of extra virgin olive oil until it shimmers.

Slick steak thinly - for a thick cut steak should slice down into three pieces. Season with salt and pepper and add to hot pan. Let steak brown slightly, and flip to other side (1 minute each side). Remove steak from pan, and turn off heat, add garlic and rosemary and saute until fragrant.

Place steak on dish and top with rosemary and garlic, crispy garlic and drizzle with extra virgin olive oil. Enjoy immediately.
