Chatham University’s CRAFT program puts the flavors of the South in your mouth with regionally-sourced grains from Pennsylvania

 Today the Center for Regional Agriculture Food and Transformation (CRAFT) at Chatham University is debuting their second Community Supported Grain Box for Pittsburgh residents. This year’s box is all about breakfast and it features nine local grain products that have been sourced from our region. Patrons can expect products like Local Grain Granola from Crustworthy, honey from Eden Hall Farm, fresh handmade masa from Cafe Agnes and more!

 In an effort to honor this year’s theme about the most important meal of the day, CRAFT produced a “Taste of PA Biscuit Mix” that utilizes flour from three different sources in the region. Frankferd Farms, Weatherbury Farm and Small Valley Milling all go into providing the unique, nutty flavor of this classic Southern breakfast staple.

When the team at CRAFT was deciding on this year’s product for development, biscuits felt like an obvious choice. As a young woman born and raised in the South, I was excited to take part in developing a mix that felt genuine to my nostalgic memories while also honoring the rich flavors of PA-sourced grains. Biscuits provide fluffy, customizable comfort to morning meals and serve as a natural base for whatever flavors you’re craving in the moment. If you want something simple and sweet, add local honey or seasonal fruit preserves while the biscuit is still warm. If savory is more your style, classic sausage gravy or a Southern twist on eggs benedict is sure to please. Can’t decide between savory and sweet? Stack your favorite brunch staples in between the buttery layers of a freshly baked biscuit and be ready to experience breakfast sandwich nirvana.
