Pickled Veggie Salad with Mustard Dressing

This pickled veggie salad is not only flavorful, but healthy, too.

PICKLED VEGGIE SALAD WITH MUSTARD DRESSING RECIPE

 

INGREDIENTS

 

FOR THE DRESSING:

1 tbsp stone-ground mustard from The Pickled Chef

1 tbsp honey

2 tbsp apple cider vinegar

4 tbsp extra-virgin olive oil

1/4 shallot, minced

1 tsp pink peppercorns, whole

Salt and pepper to taste

 

INSTRUCTIONS

 

Add everything to a Mason jar and shake well. Refrigerate for up to 2 weeks.
