Magical Zucchini Pasta Sauce

Magical Zucchini Pasta Sauce Recipe
Serves 8
Instructions
1 medium zucchini, quartered lengthwise and sliced into ½-inch pieces
1 medium yellow onion, diced
2 cloves garlic, sliced
2 tbsp extra-virgin olive oil
1 lb penne or other short, chunky pasta
½ tsp salt
½ lemon, zest and juice
12 large basil leaves
1 tsp capers
Ingredients
1. Sauté zucchini, onion, and garlic in olive oil on medium heat for 20 minutes, until very soft but not browned.
2. Cook pasta in boiling salted water until al dente.
3. Puree zucchini mixture in a blender, adding lemon, basil, capers and ½ cup pasta cooking water.
4. Serve in bowls topped with toasted, salted pistachios.
