Corn Relish

Ingredients

4 ears of fresh corn

½ cup diced red pepper

2 green onions

¼ cup red onion

1 garlic clove, chopped

½ cup chopped cilantro

¼ cup fresh limejuice

½ tsp. cumin

1 tsp. salt

1 tsp. cracked black pepper

Instructions

Husk corn and place in boiling water for 3 minutes. Remove from water and place on burner of gas stove or grill to char some of the corn, turning to not burn. In a mixing bowl, combine pepper, onions, garlic, and corn cut from husks. Toss and then add remaining ingredients. Sit for 5 to 10 minutes, and up to overnight. Yields 1 qt.
