Caramel Apple Cheesecake
Fairmont Pittsburgh Fl. 2 Pastry Chef Dwight Penney shares this luscious fall dessert with Table Magazine readers. Start with the crust. Then make the filling, and bake as instructed. Use the caramelized apples on top for something beautiful to look at, or as a garnish when you plate the slices. Enjoy!
Apple Spice Graham Crust
1 Tablespoon apple spice
3 Cups Graham cracker crumbs
¼ stick Melted butter
1 Cup sugar
Mix all ingredients together to a wet sand consistency
Bake in 9 inch greased spring form pan or cake pan for 8 minutes
Filling
2 Pounds Cream Cheese
½# Sugar
4 Whole Eggs
1# Sour Cream
1T vanilla
Mix cream cheese and sugar until smooth, add eggs 1 at a time until incorporated.
Add Sour cream and vanilla
Add caramelized apples
Pour over graham crust
Bake at 320 degrees for 45-50 minutes until done in a water bath
Caramelized Apples
4 Apples
½ cup brown sugar
1 tsp salt
1 T Cinnamon
1/4tsp nutmeg
1/4tsp clove
1/4tsp allspice
3oz butter
Peel and medium dice apples
Melt butter in pan and sauté apples
Add brown sugar and spices and cook until bubbly and apples are soft
Cool
