A Toast to Sunny Hangs with Lo Bar Cocktail Services

Outdoor hangs are picking up speed (at long last!), and soon, there’ll be poolside sipping, and fresh garden garnishes. Spring is upon us, and the hot humid days of summer will be here before we know it. In that spirit of sunnier times, I asked Aubrey Halliburton and Lisa Considine, the ladies behind Lo Bar Cocktail Services, to inspire us with a seasonal drink recipe and some menu sneak peeks.

Lo Bar founder Aubrey Halliburton says, “My favorite at-home cocktail that anyone can make! The Thai-pepper-infused gin gives a nice heat that won’t burn your palate. For garnishes, we use a fresh slice of ginger root, basil, a Thai chili, and lemongrass, but citrus, strawberries, cucumbers, and mint also work - the possibilities are endless!”

Spicy Thai Pimms Cup

Thai-Pepper-Infused Gin:

  • 1 bottle (750 ml) gin

  • 3 thai chilis

Cocktail:

  • 1 oz Pimms

  • 1 oz Thai-pepper-infused gin

  • 1 bottle Red Ribbon Jamaica's Finest Ginger Beer

Garnishes:

  • Fresh ginger

  • Basil

  • Extra thai chilis

  • lemongrass

For the Infusion:

  • Slice the chilis in half, then add to the gin bottle. Let steep for 3 days, then strain.

For the Cocktail:

  • Fill the glass with ice, top with Red Ribbon Jamaica's Finest Hot Hot Hot Ginger Beer and squeeze a wedge of lemon juice and garnish galore!

Lime in the Coconut

Made with Maggie’s Farm 50/50 rum, toasted coconut, coconut water, lime juice, and chocolate bitters. The real specialty ingredient is a toasted coconut simple syrup. Are you thirsty yet?

Cucumber Margarita

Salt, citrus, tart berries, tequila and a refreshing undercurrent of cucumber. Maybe order an extra batch for yourself?
