So Fresh, So Green

Citrusy, herbal, and refreshing: Pittsburgh Mixologist Kait Fellers walks us through two cocktails,The Green Beast and So Fresh, So Green

I know, I know – you’ve had a spritz before. But trust me, this gin-based spritz from Kait Fellers at Lawrenceville Distilling Co., So Fresh and So Green, is like no other. 

The pineapple spirit gives the fruity, refreshing drink a tropical edge, balanced out with herby, almost licorice-like dashes of Peychaud’s bitters. Grab a bottle of the distillery’s Jaggerbush American Gin to finish off the drink with a few light botanicals. 

And, while you’re at it (now that we’re armed with lots of absinthe knowledge) pick up a bottle of the distillery’s absinthe verte and take a crack at Fellers’ Green Beast, using aquafaba in place of egg whites for a vegan, herbal cocktail. 

Green Beast

Ingredients

2 oz water

1 oz 1129 Ridge Ave Absinthe

1 oz lime cordial

1/2 oz aquafaba

Instructions

Dry shake the ingredients then strain into a Collins glass and top with a fresh bouquet of mint.


So Fresh, So Green

Ingredients

5 dashes Peychaud's bitters

2 slices muddled cucumber

3/4 oz lime juice

3/4 oz pineapple syrup

1 ½  oz. Jaggerbush American Gin

Instructions

Muddle cucumber in your small tin, add all ingredients, and shake to combine. Double strain into a Collins glass, then top with seltzer and ice.
