A Box on the Doorstep

Yes, we’re all cooking up a storm at home these days. But if you want a break from the chopping, you could try a boxed meal delivered to your home delivery service. BleuBox is one of several such companies in Pittsburgh.

Their weekly menus are posted on their site. A farm-to-table ethos means as many fresh, locally grown and locally procured ingredients as possible. Good, stick-to-your ribs recipes mean hearty eating for four adults with every entrée you order. A side dish is included.

It’s all heat-and-serve…so you’ll have time to go back to your mask-making project, your favorite book, or the Netflix series you’re binging on.

The good folks at Bleubox shared a vinaigrette recipe with us today. It’s a classic French-style dressing with a little honey throw in.

Use it as written, or feel free to skip the honey and the garlic, and throw some fresh chopped herbs and some lemon or orange zest for a bright, summery version. Or you could skip the Dijon and add 1/2 teaspoons of cumin and smoked paprika for a Middle Eastern flair.

ENJOY!

Bleu Box Vinaigrette

2 teaspoon Dijon mustard 

1 clove garlic minced 

3 tablespoons white wine vinegar 

Sea salt & freshly ground black pepper to taste

1/2 cup extra virgin olive oil

1 teaspoon minced shallot 

1 teaspoon local honey

1 Tablespoon fresh lemon juice

Whisk all ingredients until emulsified. Serve over fresh mixed greens.
