Bourbon Spiced Nuts

Smoky sweet or tangy sesame, both of these recipes for nibble nuts benefit from the addition of bourbon to round out their flavors. Pair them with a bourbon-infused 19th Century Cocktail.

 

Spiced nuts I

1 large egg white

2 teaspoons bourbon

4 cups mixed salted roasted nuts (about 1 1/4 pound)

1/2 cup brown sugar

1 Tablespoon cinnamon 

2 teaspoon smoked paprika

1 teaspoon cardamom

¼ teaspoon allspice

pinch of salt

 

Spiced nuts II

1 large egg white

2 teaspoons bourbon

1 teaspoon rice wine vinegar (not flavored)

4 cups mixed salted roasted nuts (about 1 1/4 pound)

1/2 cup brown sugar

1 Tablespoon white sesame seeds

1 Tablespoon black sesame seeds

pinch of salt

 

Preheat oven to 250°F.

Whisk together egg white and bourbon (and vinegar in version II) in a large bowl until frothy, and stir in nuts. Mix together sugar and spices and stir into nuts, coating well. Spread nuts on a lightly greased baking tray and bake for 40 minutes. Stir nuts and continue baking until dry, about 1 hour total. Cool and break into bite-size chunks.
