Fl. 2 shares recipes for Granola and Chia Pudding

Fairmont Pittsburgh Sous Chef Caleb Allen shares his recipes for Coconut Chia Pudding and Fl.2 Granola as one way to enjoy your quiet time.

Fl.2 Granola

Ingredients:

8 cups rolled oats
2 cups sliced almonds
2 cups pine nuts
3 cups coconut
1 cup brown sugar
1 cup maple syrup
3/4 cup vegetable oil
Pinch of sea salt
1 vanilla bean
2 cups raisins

Directions:

Cut the vanilla beans and scrape out seeds into a bowl. Add dry ingredients. Add wet ingredients. Combine. Bake at 325° until golden brown. Add raisins to mix once cooled.


Chia Pudding

Ingredients:

2 cups coconut milk
2 tablespoons maple syrup
¼ cup water
½ cup chia seeds

Directions:

Combine wet ingredients, then whisk in chia seeds. Transfer to airtight container and refrigerate overnight.
Once set, layer it, starting with the pudding, then granola, then diced mango or any fruit you like!
